Kathy's Tomato, Kalamata Olive and Bacon Pie



 Kathy's Tomato, Bacon and Olive Pie


3 pint cartons cherry Tomatoes cut in half

1 onion diced

4 sweet mini bells sliced in rings

1pint tiny white mushrooms.  Optional 

1 c. Kalamata sliced Olives drained

1/2 c real bacon bits

2 pie shells

1 tb herbs of your choice- I used herbs de provence 

2 eggs beaten

2 cups grated cheese your choice I used mozzarella 


Saute in olive oil- onions, peppers and mushrooms 

Roast at 375 halved Tomatoes tossed with a smidgen of salt about 30 mins


Combine sautéed mixture and Roasted Tomatoes,  add 1 tb herbs de provence or whatever you like

1/2 c bacon bits

1 c olives


Mix in  2 beaten eggs and 

2 cups  grated mozzarella  cheese or any cheese you have on hand.


Fill pie shells and bake at 375 30 to 45 minutes til crust is golden and pie is set.
